Beef and Silken Tofu Stew

    This is an easy one pot dish from Korea known as 'Suntofu Chigae'. Beef mince and silken tofu are cooked with red chilli powder and garlic before an egg being added just before serving.

    Serves: 2 

    • ½ teaspoon oil
    • ½ teaspoon Korean red chilli powder
    • 1 teaspoon crushed garlic
    • 100g beef mince
    • 600g silken tofu
    • 1 1/3 cup (330ml) water
    • ½ teaspoon salt
    • ¼ teaspoons ground black pepper
    • 3 spring onions, diced
    • 1 egg

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Put a clay pot or saucepan on a medium high heat. Add the oil, red chilli powder and garlic. Sauté for 2 minutes.
    2. Add the beef and cook until it turns brown.
    3. Scoop the tofu into the pot with a spoon then add the water, salt and black pepper. Boil for 10 minutes.
    4. Add the egg and diced spring onions. Boil for another 3 minutes and serve.
