Blanched Bean Sprout Salad

    This is an easy Bean Sprout salad from Korea where it is known as 'Sukjoo Namool'. The bean sprouts are blanched then combined with carrot, spring onion and seasonings.

    Ingredients
    Serves: 4 

    • 2 cups (500ml) water
    • 500g bean sprouts
    • 1 baby carrot, julienned
    • 1 spring onion, cut 2.5cm lengths
    • 1 teaspoon crushed garlic
    • 1 teaspoon sesame oil
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper
    • ¼ teaspoons sesame seeds

    1. Boil water and cook the bean sprouts for 5 minutes.
    2. Wash the bean sprouts in cold water to halt the cooking and drain well.
    3. Put the cooked bean sprouts in a medium bowl.
    4. Place the carrot and spring onion into a small bowl. Cover with water and cook for 30 seconds in a microwave oven. Drain the water then add to the cooked bean sprouts.
    5. Add the garlic, sesame oil, salt, black pepper and sesame seeds; mix well.
