    This salad uses chicken, prawns and pork that have all been steamed then tossed in a homemade dressing. Served individually on the serving plate; this looks as well as tastes great.

    Serves: 4 

    • Dressing
    • 2 dried red chillies, reconstituted and diced
    • 5 cloves garlic, sliced
    • 1 tablespoon palm sugar
    • 2 tablespoons fish sauce
    • 1 lime, juiced
    • 4 tablespoons tamarind juice
    • Salad
    • 200g boneless chicken, sliced and steamed
    • 200g prawns, shelled, deveined, steamed and sliced
    • 200g lean pork, sliced and steamed
    • 1 stalk celery, diced and divided
    • 1 small white radish, julienned finely
    • 1 medium carrot, peeled and julienned finely
    • 5 sprigs mint, picked and torn

    1. Dressing: Place all of the dressing ingredients in a saucepan and bring to a boil. Turn off the heat and let cool to room temperature.
    2. Salad: Toss the chicken, prawns, pork and celery separately with the dressing, Arrange in neat piles on a platter.
    3. Toss the radish, celery and carrot with the dressing then place in the middle of the platter.
    4. Garnish with the mint and serve.
