    This is a great salad to have at Chinese New Year as that is when the Pomelo's are in season. Instead of cabbage you could use beans, cucumbers or carrots. To make a complete meal you could add some cooked scallops or prawns.

    Ingredients
    Serves: 4 

    • 1 small pomelo
    • 60ml vegetable oil
    • 4 cloves garlic, cut into thin slices
    • 1 stalk lemongrass, using only the tender white core
    • 1 small bunch coriander
    • 2 bird's eye chillies, diced, optional
    • 2 tomatoes, diced
    • 1/2 small white cabbage, thinly sliced
    • 1 tablespoon fish sauce
    • 1 large lime
    • 2 tablespoons ground roasted peanuts

    1. Peel the pomelo, remove the pith and separate the pulp reserving the juice. Place in a bowl and set aside.
    2. In a small frying pan heat the vegetable oil. Fry the garlic until golden brown and crispy. Drain the garlic chips on paper towel. Reserve the garlic oil.
    3. Thinly slice the lemongrass crosswise then mince into tiny, tiny pieces.
    4. Separate the coriander leaves and stalks. Roughly cut the leaves and finely diced the stems.
    5. Combine the pomelo, lemongrass and coriander.
    6. Add the chillies, tomatoes, cabbage and garlic chips.
    7. Dress with fish sauce, lime juice and garlic oil (add as much as you like). Toss and mix well.
    8. Taste and adjust seasonings if desired. Turn onto a serving platter and sprinkle with peanuts.
