Potato and Beef Patties

    This is the Malaysian version of a potato cake known as 'Pergedel goreng' that uses fresh mince as an added dimension to the pattie.

    Ingredients
    Serves: 20 

    • 600g potatoes
    • 300g beef mince, optional
    • 10 shallots, sliced thinly
    • 4 spring onions, diced
    • 2 eggs, whisked
    • 1 pinch salt and pepper, to taste
    • plain flour
    • oil, for frying

    Directions

    1. Boil potatoes and mash in bowl.
    2. Saute the shallots until golden brown, drain and set aside to cool.
    3. Add the minced beef, spring onions, shallots, salt and pepper to the mash potatoes. Stir in the eggs and mix well.
    4. Form mixture into round patties about 4cm in diameter. Roll the patties lightly in flour.
    5. Heat oil in a frypan until hot then fry the patties until cooked on both sides. Drain and set aside for serving.
