Tofu and Tomato Pasta

    This is a great pasta dish that uses tofu instead of meat; sometimes I add to this recipe by also using mushrooms, zucchini and carrot.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 1 small onion, sliced thinly
    • 350g Tofu or other protein
    • 1/2 red capsicum, thinly sliced
    • 1/4 cup tomato sauce
    • 1/2 stock cube or 3 tablespoons soy sauce
    • 1/4 cup (65ml) water (pasta water, if you just boiled pasta for this occasion)
    • 5 cups cooked pasta
    • 1 handful basil leaves, torn into small pieces
    • 1 tomato, cut into small wedges

    1. In a large frying pan or wok heat the vegetable oil over medium high heat.
    2. Fry the onion, tofu and capsicum until the vegetables soften; about 2 or 3 minutes.
    3. Mix the tomato sauce, stock cube and water to create a savoury sauce.
    4. Add the pasta and tomato sauce mixture then fry everything together. Adjust the seasoning if needed by adding more stock or soy sauce.
    5. Serve garnished with tomato wedges and torn basil leaves.
