Thai Peanut and Chilli Sauce

    This is an ideal homemade peanut and chilli sauce to go on fried fish or roasted chicken. Roasted chilli flakes and peanuts are combined in a sugar water to create this quick and easy sauce.

    Ingredients
    Serves: 4 

    • 60ml water
    • 1/4 cup (60g) sugar
    • 1 tablespoon rice vinegar
    • 1 teaspoon roasted chilli flakes
    • 2 tablespoons chopped roasted peanuts
    • 2 tablespoons diced coriander

    1. Put the water, sugar and vinegar into a small saucepan and heat until the sugar dissolves and boil for 5 minutes. Remove from heat.
    2. Add the chilli flakes and peanuts.
    3. When cool garnish the sauce with coriander.
    4. Serve in a small bowl paired with fried fish or roasted chicken.
