Summer Hibiscus Drink

    If you want to surprise your friends with something really different why not try this Thai drink 'Nam Dog Jiup' that uses hibiscus flowers to create a unique drink ideal for a hot summer's day.

    Ingredients
    Serves: 10 

    • 2 litres water
    • 1 cup (220g) caster sugar
    • 2 cups (500ml) dried whole hibiscus flowers
    • 1 kg crushed ice

    1. Put the water and sugar in a large stainless steel or glass saucepan and heat until the sugar dissolves.
    2. Add the hibiscus flowers and turn off the heat. Let the flowers steep and cool for 4 hours or overnight.
    3. Taste the drink and adjust the sweetness with more sugar if you prefer.
    4. Fill glass mugs with crushed ice and pour in the drink. Add a straw and a couple hibiscus flowers for garnish.
