Mussels in Black Bean Sauce

    This is an easy dish with mussels being cooked in a black bean sauce that also contains garlic, ginger and chilli.

    Serves: 6 

    • 600g mussels or clams
    • oil for cooking
    • 4 cloves garlic, diced
    • 3 shallots, diced
    • 1 tablespoon black bean paste
    • 2cm ginger, thinly sliced
    • 1 fresh red chilli, sliced
    • 1 teaspoon caster sugar
    • 2 stalks spring onions, diced

    1. Soak the mussels in cold water for 20 minutes. Rinse under running water and drain.
    2. Heat a little oil in frypan and fry the garlic and shallots until lightly brown. Add the black bean paste and stir fry for 2 minutes.
    3. Add the ginger, mussels and chillies then stir fry over high heat for a minute. Add sugar to taste.
    4. Cover the frypan for a few minutes to let the mussels open. Uncover the frypan, toss in the diced spring onions and mix well. Serve immediately.
