    This simple stir fried pork dish is known in Thailand as 'Moo Tord' The pork is marinated in pepper, garlic and coriander before being stir fried.

    Serves: 4 

    • 1/4 cup whole black peppercorns
    • 1/2 cup small garlic cloves
    • 1/2 cup coriander root
    • 1 tablespoon salt
    • 1 per person (about 250g) pork tenderloin, sliced into 1-1.5 cm slices
    • oil for frying
    • 3 sprigs coriander leaves

    1. In a mortar and pestle smash the black peppercorns until roughly ground then add the garlic cloves and smash until well broken up. Add the coriander root and continue to smash until fairly smooth. Mix in the salt.
    2. Mix in with the pork and marinate for 4 hours.
    3. Fry the pork in oil until crispy then drain. Serve on a plate with the coriander sprigs on top.
