This is a basic recipe for a curry powder ideal to use on meat. All the spices are washed, dried, dry fried then ground down into a powder that can be stored until needed.

Ingredients
Serves: 30
600g coriander seeds
150g cumin seeds
150g fennel seeds
150g dried chillies
80g dried turmeric root
80g black peppercorns
40g cinnamon sticks
20 cloves
15 cardamoms
Directions Preparation:15min › Ready in:15min
Wash coriander, cumin and fennel then dry in sun.
Roast in dry frypan until fragrant.
Grind everything in spice grinder.
Cool and store in airtight container. Once a week open the containers to air the curry powder.
