This is a basic recipe for a curry powder ideal to use on meat. All the spices are washed, dried, dry fried then ground down into a powder that can be stored until needed.


Serves: 30 

  • 600g coriander seeds
  • 150g cumin seeds
  • 150g fennel seeds
  • 150g dried chillies
  • 80g dried turmeric root
  • 80g black peppercorns
  • 40g cinnamon sticks
  • 20 cloves
  • 15 cardamoms

Preparation:15min  ›  Ready in:15min 

  1. Wash coriander, cumin and fennel then dry in sun.
  2. Roast in dry frypan until fragrant.
  3. Grind everything in spice grinder.
  4. Cool and store in airtight container. Once a week open the containers to air the curry powder.
