Lemon Barley

    This is a good option when you have a sore throat. You can add a little honey too if you are looking for something a bit different.

    Serves: 4 

    • 100g pearl barley
    • 2 cups (500ml) water
    • 200g rock sugar
    • 1 large lemon, juiced

    1. Rinse the barley to get rid of grit and stones. In a large saucepan boil the barley with the water and rock sugar.
    2. Simmer for about 30 minutes until the barley is soft and has expanded to about twice its size.
    3. You can strain the barley or use a spoon to eat it together with the liquid. Add the lemon juice.
    4. Serve hot or add ice cubes to serve on a hot day.
