    This is a lovely little jelly snack, morning tea or dessert that uses agar to set its coconut and coffee layers.

    Ingredients
    Serves: 8 

    • Coffee Layer
    • 1 tablespoon instant coffee
    • 2 tablespoons warm water
    • 2 tablespoons agar powder
    • 3 cups (750ml) water
    • 1 cup (220g) white sugar
    • Coconut Layer
    • 1 tablespoon agar
    • 1 cup (250ml) water
    • 1/4 cup (60g) white sugar
    • 1 1/2 cups (375ml) coconut cream
    • 1 teaspoon salt

    Directions

    1. Coffee Layer: Mix the instant coffee with the 2 tablespoons water until dissolved.
    2. Place the agar and water in a small wok or saucepan and heat until agar is completely dissolved. Add the sugar and cook until dissolved; do not boil. Add the coffee and stir.
    3. Remove from the heat and place in a small bowl that is sitting in a bowl of warm water. You do not want to let the mixture cool completely.
    4. Coconut Layer: Place the agar and water in a small wok or saucepan and heat until agar is completely dissolved. Add the sugar, coconut cream and salt then cook until dissolved; do not boil.
    5. Remove from the heat and place in a small bowl that is sitting in a bowl of warm water. You do not want to let the mixture cool completely.
    6. Assembly: Lay out small foil cups.
    7. Begin by placing 2 tablespoons of the coconut layer into the foil cups. Let almost set and then place 2 tablespoons of the coffee layer into the cups. Repeat this process until all the cups are full or you run out of mixture.
    8. When the jellies are completely set remove from the cups and serve.
