Garlic Flavoured Oil

    This is a popular condiment in Thailand where it is known as 'Kratiem Jiaw'; garlic is gently fried in oil to transfer its flavour.

    Serves: 1 

    • 1 head garlic
    • 1 cup (250ml) vegetable oil

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Separate the cloves and peel most the skin off them.
    2. Put the cloves into a mortar. Pound them to reduce them to a medium fine pulp.
    3. Pour the oil into a small saucepan. Add the garlic mush.
    4. Turn the heat on medium low and let the garlic fry away slowly until light golden brown, stirring every now and then.
    5. Keep an eye on the garlic for when it starts to brown as you don't want it to brown too much before you take it off the heat. It will cook some more as it cools.
    6. Let the oil cool completely then store in the refrigerator in a tightly closing jar.
