Egg and Pineapple Fried Rice

    This is a simple fried rice dish that includes pineapple, bacon and tomato There is also egg in it and optionally you can serve with a fried egg on top.

    Serves: 4 

    • 6-8 pieces of bacon, cut width-wise into strips
    • 2 garlic cloves, diced
    • 1 onion, diced
    • 1 large tomato, diced
    • 2/3 cup fresh or tinned pineapple, cut into small pieces
    • 5 cups rice, cooked and cooled
    • 2 tablespoons tomato sauce
    • 2 tablespoons light soy sauce, or more to taste
    • 1 tablespoon sugar, or more to taste
    • 1/4 teaspoon white pepper, ground
    • 3 eggs, whisked
    • cucumber, spring onions, coriander sprigs, lime and chillies for garnish
    • 4 eggs, fried, optional garnish

    1. Fry the bacon pieces in a large frypan or wok over medium heat.
    2. Remove the crisp bacon pieces to a plate and leave about two tablespoons worth of bacon grease in the frypan. Keep the rest of the grease in a small container close by, for when more is needed.
    3. Turn the heat up to medium high. Add garlic and fry for a few seconds until fragrant.
    4. Add onions; fry 2-3 minutes until cooked through.
    5. Add tomato and pineapple. Fry quickly until heated through.
    6. Turn heat to high. Add another tablespoon of bacon grease. Add the rice. Break up rice and stir fry well until the rice is in loose pieces and coated evenly with bacon grease.
    7. Season the rice with tomato sauce, light soy sauce, sugar and white pepper.
    8. Push the rice mixture to one side of the frypan. Add the whisked eggs to the other side. Fry and scramble until almost cooked through. Stir into the rice mixture.
    9. Add crisp bacon pieces.
    10. Adjust seasonings if necessary.
    11. Serve with garnish items on side and the fried egg on top, if using.

    Very tasty. I used pork schnitzel instead of bacon and found that I did not have a tomato I also only used 1.5 cups of rice (that is the uncooked volume but it was still not 5 cups)  -  03 Sep 2012
