Bean Sprout Salad

This Malaysian bean sprout salad known as 'Kerabu Taugeh' is easy to make with the bean sprouts being mixed into a homemade sauce comprising of chillies, onions, garlic and coconut.
100g grated coconut or desiccated coconut
1 tablespoon oil for cooking
1 pinch salt, to taste
500g bean sprouts, remove tails and blanched
1 red chilli, finely sliced
8 red chillies
60g dried prawns, soaked in hot water and drained
3 cloves garlic
- Toast the coconut in a dry frypan over low heat stirring constantly until it turns golden brown. Remove and set aside.
- Pound or blend the spice ingredients until a fine paste.
- Heat a little oil in frypan and fry the paste until fragrant. Add the coconut and salt then mix well. Remove and let cool.
- Toss the bean sprouts into the mix and garnish with sliced chillies.
