    This is an Indonesian prawn and vegetable curry that is very mild and fairly simply flavoured, packed with vegetables it is a great family dinner.

    Ingredients
    Serves: 4 

    • 1 medium onion
    • 1 clove garlic
    • 1 red chilli, discard seeds
    • 3cm galangal
    • 1 teaspoon ground coriander seeds
    • 225g prawns peeled and devein
    • 225g cabbage
    • 225g cauliflower
    • 1 small eggplant, cubed
    • 225g string beans
    • 1 small carrot, julienned
    • 1 1/2 cups (375ml) coconut milk
    • 1 1/2 cups (375ml) water
    • 1 bay leaf

    1. Place the onion, garlic, chilli, galangal and coriander seeds into a food processor and blend until a fine paste.
    2. Heat oil and saute the paste for 1 minute until fragrant.
    3. Add prawns and saute for 2 minutes.
    4. Add the cabbage, cauliflower, eggplant, beans and carrot then cover and cook over low heat for about 10 minutes or so.
    5. Pour in the coconut milk, water and bay leaf. Cook uncovered stirring almost continuously until vegetables are tender. Serve.
