Barbecue Fish in a Banana Leaf

    This Malaysian barbecue fish recipe called 'Ikan Bakar' uses a banana leaf rather than modern-day foil or baking paper to protect and flavour the fish while being cooked.

    Ingredients
    Serves: 4 

    • 1 large whole fish, e.g. herring, mackerel or sting ray
    • 1 tablespoon turmeric powder
    • 2 teaspoons salt
    • 1 large banana leaf, cut to size

    1. Clean fish and remove scales. Score both sides with 3 diagonal slashes (except if using sting ray).
    2. Rub the whole fish with turmeric powder and salt.
    3. Place on banana leaf and wrap it like a parcel, securing the ends with toothpicks.
    4. Depending on the size of the fish, barbecue on low heat for about 30 minutes on both sides until cooked.
    5. Unwrap the parcel and serve the fish your favourite sauce.
