This is a beautiful simple dessert using fresh pineapple that is simmered in a basic sugar syrup then cooled and served with ice.


Serves: 4 

  • 1 cup (220g) caster sugar
  • 3 cups (750ml) water
  • 1 small 1/2 kg pineapple, peeled and sliced into triangles
  • 1kg ice

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Heat the sugar and water in a saucepan. Add the pineapple and simmer until the pineapple is cooked through; about 10-15 minutes. Cool to room temperature.
  2. Place the pineapple in an individual bowl with a bit of syrup then add a couple spoonfuls of ice. Serve.
