    This is a very easy Thai prawn dish that uses an easy marinade/sauce containing garlic, white pepper, fish sauce and soy sauce before stir frying.

    Serves: 4 

    • 8-10 garlic cloves, diced
    • 1/2 teaspoon white pepper, ground
    • 2 tablespoons fish sauce
    • 2 tablespoons light soy sauce
    • 1 tablespoon sugar
    • 2 tablespoon tapioca
    • 6 tablespoons vegetable oil or lard
    • 500g medium size shrimp, shell-on

    1. Mix the garlic, white pepper, fish sauce, soy sauce, sugar and tapioca in a bowl. Toss the shrimp well in the mixture.
    2. Heat 2-3 tablespoons oil in a heavy frying pan or wok over high heat. Add a third or half of the shrimps and fry until golden brown and crispy, turning once. Repeat with the rest of the fat and shrimp.
    3. Serve immediately with lots of rice.
