Prawn Sambal

    Dried prawn sambal is a spicy condiment that can be used with soups, grilled meats or as an addition to a stir fry.

    Serves: 10 

    • 15 dried chillies, deseeded and soaked in water to soften then drained
    • 6 shallots, peeled
    • 2 garlic cloves, peeled
    • 1/2 cup dried prawns, soak in water to soften then drained
    • cooking oil
    • 1 tablespoon tamarind juice
    • 1 pinch salt and sugar, to taste

    1. Put the chillies, shallots and garlic in food processor then blend until fine.
    2. Cut the dried prawns to medium-fine.
    3. Heat a little oil in a frypan and saute the chilli paste until fragrant. Add the dried prawns, tamarind juice, salt and sugar.
    4. Cook until the sambal thickens.
