Fresh mussels are cleaned and crumbed with the use of mayonnaise as well as egg before being deep fried.


Serves: 3 

  • 500g mussels
  • 1 egg, whisked
  • 3/4 cup (90g) breadcrumbs
  • 2 tablespoons mayonnaise
  • 1 teaspoon salt, for mussels
  • 1 lemon wedge
  • cooking oil
  • 1/2 teaspoon ground black pepper

  1. Throw away any mussels that have broken shells. If shells are opened, tap on them. If it’s alive it will close, if it stays open throw away.
  2. Lightly blanch mussels with salt water to open and purge them of sand. Clean and debeard shells then open them up and detach mussels.
  3. Rinse the mussels and drain. Mix mussels with mayonnaise. Add pepper to breadcrumbs.
  4. Roll mussels in breadcrumbs then dip into whisked egg and coat with crumbs again.
  5. Deep-fry until golden brown. Squeeze lemon wedge just before serving.
