Prawn and Onion Fritters

    These prawn and onion fritters make a great entree for an Asian themed dinner. They can be made ahead of time then kept warm in the oven before serving with sweet chilli sauce.

    Serves: 8 

    • 2 1/2 cups (300g) plain flour
    • 1/2 cup small shrimps, finely diced
    • 2 spring onions, finely diced
    • 2 stalks celery, finely diced, optional
    • 1 egg
    • 2 cups (500ml) water
    • 1 pinch salt and pepper, to taste
    • oil for deep frying

    1. Mix all the ingredients together in a bowl until you get a smooth batter.
    2. Heat oil in wok until hot and drop spoonfuls of the batter into the oil and fry until golden brown. Drain on paper towel to soak the excess oil. Serve with chilli sauce.
