Stir Fried Snake Beans and Shitake Mushrooms

    This is a delightful vegetable side dish that presents snake beans and shitake mushrooms in an amazing rich sauce combining oyster sauce, fish sauce, garlic and sesame seeds.

    Serves: 3 

    • 1 teaspoon dried chillies, sliced
    • 1 pinch peppercorns, to taste
    • 250g snake beans
    • 60g shitake mushrooms
    • 1 teaspoon cooking oil
    • 2 tablespoons minced garlic
    • 1 teaspoon oyster sauce
    • 1 tablespoon fish sauce
    • 1 teaspoon sesame seeds
    • 1 pinch salt and pepper, to taste

    1. Soak chillies and peppercorns in water.
    2. Wash snake beans and cut them in equal lengths.
    3. Lightly rinse and cut off tip of mushrooms. Slice them thinly.
    4. Drain chillies and peppercorns. Heat oil and fry them until fragrant. Add garlic.
    5. Add the snake beans and oyster sauce. Stir-fry at a high heat for about 2 minutes then add the mushrooms, fish sauce, salt and pepper.
    6. When it's almost ready stir in the sesame seeds and serve.
