In a medium bowl combine all the ingredients except the oil. Mix well until there are no more large lumps.
In a large frying pan heat the oil until shimmering. Pour about 4 tablespoons of batter into the hot oil to form a mound about 5cm across. Do not crowd the frying pan and work in batches.
Cook until the fritters are golden brown on both sides; about 8 minutes. Flip halfway through cooking with a slotted spoon or spatula.
Remove from the oil and drain on paper towel. Serve hot.
