Mashed Banana Fritters

    These Malaysian banana fritters known there as 'Cokodok Pisang' use a mashed banana mixture rather that battered whole bananas.

    Serves: 4 

    • 500g ripe bananas, mashed
    • 2 1/2 cups (310g) self raising flour
    • 1/2 cup (125g) sugar
    • 1 pinch salt, to taste
    • oil for deep frying

    1. Mix the mashed bananas in a bowl with the flour.
    2. Add sugar and salt and stir until the batter is well mixed. The batter should not be too thick and can be dropped from a spoon. If it is too runny add a bit more flour.
    3. Heat oil in wok, saucepan or deep fryer until hot. Drop spoonfuls of batter into the hot oil and cook until it floats and is golden brown.
    4. Drain on paper towel and serve hot.
