Soba Noodles with Sesame Chard

    This is a simple vegetarian noodle dish that can be served hot or cold; it can be eaten as a main or as a side dish.

    Serves: 4 

    • 250g soba noodles
    • 1 bundle rainbow or swiss chard, stems removed, diced
    • 4 garlic cloves, crushed
    • 1 teaspoon soy sauce
    • 1 1/2 teaspoon gomashio
    • 1 1/2 tablespoon olive oil
    • 1 teaspoon rice wine vinegar

    1. Boil a saucepan of water and cook soba noodles according to instructions. Drain and set aside.
    2. Heat olive oil in a saucepan and saute the garlic. Add the chard and saute until wilted. Season with the rice wine vinegar and soy sauce.
    3. Toss the noodles into the saucepan and sprinkle the gomashio liberally then mix well. Remove the noodles and chill or serve hot.


    Gomashio is made from toasted sesame seeds that are mixed with salt in a ratio ranging from 5:1 to 15:1 with the smaller amount being the salt. If you cannot buy it then you can make your own.
