Chilli and Lime Sauce

    This is a beautiful chilli and lime sauce that partners well with any seafood. There is kaffir lime leaves in the sauce which brings a strong but delicate lime flavour.

    Serves: 1 

    • 3-4 cloves garlic, finely diced
    • 3-4 chillies, to taste
    • 1 pinch salt, to taste
    • 2 teaspoons sugar
    • 1/4 cup (60ml) lime juice
    • 3 tablespoons fish sauce
    • 3-4 kaffir lime leaves, sliced into very, very thin strips

    1. In a mortar grind the garlic with a sprinkle of salt to a paste. Add the chillies then grind them to a coarse paste.
    2. Add the sugar, lime juice and fish sauce. Stir everything together and taste. It should be sour, salty and sweet in that order. There should be good heat from the chillies. Adjust seasoning if needed.
    3. Add the kaffir lime leaves and pour into a serving bowl.
