Deep Fried Prawns

These Filipino prawns known as 'Camaron Rebosado' are marinated then coated in egg and flour before being deep fried.

- 500g fresh large prawns
- 2 tablespoons soy sauce
- 1/2 lemon, juiced
- 1 pinch salt and pepper, to taste
- 3 eggs, whisked
- 1/2 cup (60g) flour

- Remove heads and shells from prawns, leaving tail intact. Devein shrimp by slicing the back to remove vein.
- Toss prawns in soy sauce, lemon juice, salt and pepper. Set aside for 30 minutes.
- Roll prawns in whisked eggs, dip in flour then deep fry in medium hot oil until brown. Serve hot.
