Coconut Drink

    This is a refreshing Filipino drink using 'Buko' or baby coconuts. It includes the coconut juice and scraped out flesh which are combined and served with ice.

    Ingredients
    Serves: 2 

    • 2 young coconuts
    • 1 cup (250ml) water, if required
    • ice cubes
    • 1 pinch sugar, to taste

    Directions

    1. Cut the top of the young coconut to expose the soft meat inside. Pour the juice into a large bowl.
    2. Split the young coconut in half. Using a spoon scrape out the meat and place in the bowl with juice.
    3. There should be enough juice for 2 servings, however add more water if required.
    4. Add ice cubes to chill and if you like it sweet add a little sugar. Serve in tall glasses.
