This is a refreshing Filipino drink using 'Buko' or baby coconuts. It includes the coconut juice and scraped out flesh which are combined and served with ice.
2 young coconuts
1 cup (250ml) water, if required
1 pinch sugar, to taste
- Cut the top of the young coconut to expose the soft meat inside. Pour the juice into a large bowl.
- Split the young coconut in half. Using a spoon scrape out the meat and place in the bowl with juice.
- There should be enough juice for 2 servings, however add more water if required.
- Add ice cubes to chill and if you like it sweet add a little sugar. Serve in tall glasses.
