Chocolate and Cherry Biscuit

    This is a simple chocolate biscuit that is piped in a flower shape then a cherry placed in the centre before baking.

    Serves: 25 

    • 12 red glace cherries
    • 220g butter
    • 2 egg yolks
    • 1 egg white
    • 1 cup (250g) sugar
    • 3 teaspoons vanilla essence
    • 2 3/4 cups (340g) plain flour
    • 1/2 cup (60g) cocoa powder

    1. Slice the cherries into small bits for the garnish.
    2. Soften the butter until melted. Whisk the egg yolks, egg white and sugar together until the sugar is dissolved. Add the whisked egg mixture to the butter along with the vanilla essence then mix.
    3. Sift the flour and cocoa powder together into a large bowl. Pour in the wet mixture slowly into the flour blending well.
    4. Put the dough into a biscuit press using a large star/flower tip. Press into individual biscuits onto a greased baking tray. Place a cut cherry in the centre for garnish.
    5. Bake in a 200 degrees C oven for 15 minutes. Remove from oven and let cool. Store in airtight container.
