Mung Bean Patties

    These are a mung bean based pattie although they also contain ground rice and beef with a hit of flavour coming from kimchi.

    Serves: 6 

    • 1 cup dried, hulled Mung beans
    • 1/4 cup (60g) uncooked rice
    • 450g mung bean sprouts
    • 250g minced pork or beef
    • 1/2 onion, diced
    • 1/2 piece Kimchi, diced
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 dash oil for frying

    1. Wash the mung beans and rice 5 to 6 times with cold water. Place in a bowl then fill with cold water; set aside to soak overnight.
    2. In the morning wash 2 to 3 times. Fill bowl with enough cold water to just cover the beans and rice. Set aside until ready to cook.
    3. Grind mung beans and rice then place in a large bowl. Add the remaining ingredients and mix well.
    4. Heat a frying pan over medium heat then add oil. Using a small scoop place small amounts of the mixture in the frying pan and flatten.
    5. Cook for 2 minutes. Flip over, press lightly and cook for 2 more minutes.
