This is a Malaysian style fried chicken locally known as 'Aam Goreng Berlada' where chicken pieces are fried then added to a spicy sauce containing chilli, garlic and ginger.

Ingredients
Serves: 6
1 whole chicken, cut into small pieces
2 teaspoons turmeric , enough to lightly coat the chicken
1 pinch salt, to taste
2 tablespoons cooking oil
3 tablespoons tamarind juice
1/2 cup tomato sauce
1 pinch sugar, to taste
Spice Blend:
6 dried chillies, soak in hot water, discard seeds
Rub the chicken pieces with turmeric and salt then let rest for 10 minutes.
Blend all the spice ingredients in blender until fine.
Heat cooking oil in wok until hot and fry the chicken until it is almost done. Drain the chicken on paper towel and set aside.
Heat a tablespoon of oil in frypan then add spice blend. Stir until fragrant then add the fried chicken. Pour in the tamarind juice and tomato sauce and chicken then stir until the chicken is evenly coated.
Check the seasoning and add more sugar if it is too spicy. Cook until the sauce thickens a little and coats the chicken.
