    An amazing cream cheese icing - definitely for coconut lovers and perfect to jazz up a plain cake. For more coconut goodness, prinkle toasted coconut on top once you've iced it.

    Serves: 10 

    • 125g cream cheese, room temperature
    • 60g butter
    • 2 cups icing sugar
    • 1 tablespoon cream
    • a good pinch of salt
    • 1/4 teaspoon coconut essence
    • 1/2 teaspoon vanilla essence
    • 1/4 cup desiccated or shredded coconut

    1. Beat the cream cheese and butter in a mixer bowl until light and fluffy. Gradually add the icing sugar, one cup at a time, alternating with the cream.
    2. Beat in the salt, coconut and vanilla essences. Continue beating until mixture is smooth and spreadable. (Add more icing sugar if necessary to thicken, or more cream to thin.)
    3. Stir in the coconut - then spread the icing on a cooled cake.
