choc ripple icecream sandwhiches

    Makes: 12 12 individual or 6 stacked

    • 1 packet choc ripple biscuits
    • 2 x 400ml whipping cream
    • 1 bar peppermint crisp choc bar
    • 250g dairy milk choc melted
    • 400 ml condensed milk

    Preparation:10min  ›  Cook:10min  ›  Extra time:2hours freezing  ›  Ready in:2hours20min 

    1. on a lined tray , lay half packet of biscuits 3 cm apart
    2. add to large mixing bowl both cartons of whipping cream, condensed milk ,whip on high with electric mixer until thick.
    3. crush peppermint crisp and fold through mixture. spoon onto biscuits and sandwhich the other half of bicuits ontop of mixture.
    4. on stove top boil water and place a heat proof bowl on top , place choc in bowl and melt over heat, take off and let cool slightly
    5. spoon choc over sandwhiches to drizzle over sides . chill in freezer for 2 hours and enjoy.


    optional; you can add another level to the sandwhich and make it a tower , impressive for parties
