Leone's Tofu Quiche

    A vegetarian quiche with no eggs but has vegetables, nuts and tofu. You could make it vegan by using Nuttelex (or margarine) instead of butter. A very nutritious vegetable pie - great for lunch or dinner.

    Serves: 6 

    • 1 medium carrot, finely chopped
    • 1 medium onion, finely chopped
    • 1 clove garlic, crushed
    • 1 cup cashews
    • 375g firm tofu
    • 1 teaspoon basil
    • Pastry
    • 3/4 cup plain flour
    • pinch salt
    • a little water (start with about a tablespoon)
    • 30g butter

    1. Make the pastry: place the butter and salt in a bowl and rub butter into flour. Mix enough water to make a dough. Knead for a minute, lightly flour the bench surface and roll the pastry out to fit in a pie dish.
    2. Saute vegetables in a little oil. Blend 1 cup of cashew nuts with 375gms tofu. Add 1 teaspoon basil.
    3. Add this to the vegetables. Turn mixture onto the pastry-lined pie dish. Bake for 30 minutes in a moderate oven.
