This is a very filling lunch or even dinner recipe. I used to order it all the time for lunch where I worked. Absolutely delicious ingredients that complement each other. Add sliced olives if you like.
Cut chicken into thin slices. Cook until brown in frying pan. Remove from pan. Cook bacon until cooked to your liking.
Add a layer of chicken to one side of the focaccia bread, then layer the bacon, pineapple and sundried tomatoes. Sprinkle the grated cheese and spread the mayonnaise on the inside of the top piece of focaccia bread, then sandwich together.
I recommend microwaving for a minute first before putting in sandwich press or under the grill to toast.
