White Chocolate Coconut Macarons

    These coconut macaroons are great by themselves or you can sandwich them together which a white chocolate filling.

    Serves: 8 

    • salt, to taste
    • 3 egg whites
    • 150g almond meal
    • 1 1/2 cups (250g) icing sugar
    • 1 tablespoon desiccated coconut
    • Filling
    • 120g white chocolate
    • 150ml cream
    • 4 tablespoons desiccated coconut

    1. Preheat the oven to 150 degrees C. Line a baking tray with baking paper.
    2. Add a pinch of salt in a bowl then the egg whites and whisk until stiff.
    3. In a bowl mix the ground almonds with icing sugar and grated coconut. Stir this mixture into the egg whites and mix until smooth and shiny.
    4. Pour the mixture into a piping bag and pipe about a spoonful of batter onto the baking paper at regular intervals. Set aside for 30 minutes.
    5. Bake the macaroons in oven for 15 minutes. Remove from the oven and cool.
    6. Filling: Melt the white chocolate in a double boiler over medium heat then add the cream. Stir in the coconut. Mix well. Refrigerate.
    7. Take one macaron and spoon the chocolate and coconut filling on the flat part. Take a second macaroon and put on top of the filling. The 2 macaroons should stick to the filling.
