Vegetable Bake

There are a large combination of vegetables that can be used in this layered vegetable bake. It makes a great side to a roast or fried meats.


Serves: 6 

  • 6 zucchinis, sliced
  • 6 tomatoes, sliced
  • 4 onions, sliced
  • 1 large eggplant. sliced
  • 1 pinch salt and pepper, to taste
  • 100ml olive oil
  • 100ml water
  • 1 teaspoon thyme leaves

Preparation:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Preheat oven to 200 degrees C.
  2. Layer the sliced vegetables in a baking dish. Season with salt and pepper. Pour olive oil and water over the vegetables. Sprinkle with thyme.
  3. Bake in the oven for one hour. After 30 minutes cover the baking dish with foil to prevent from burning.
