Bring water, salt and rice to the boil in a saucepan over medium heat. Reduce heat to low, cover and simmer for 10 minutes or until there is no more water.
Add the milk, cream, sugar and vanilla then cook over medium heat for about 35 minutes. The rice will become very soft and the mixture will be creamy and thick. Pour the rice pudding into a bowl or individual ramekins to serve.

Lovely and creamy. Had to use whipping cream instead of thickened cream as this is not available in Malta. Will use less sugar next time too as a little too sweet for my taste but a definite keeper! - 04 Jan 2015
