The crab, tomato and grapefruit are great contrasting colours and flavours in this simple and tasty dish. The presentation is best when served in a glass.

Serves: 4
200g crab meat
20 cherry tomatoes
1 lemon, juiced and zested
balsamic vinegar
2 grapefruit
1 pinch pepper, to taste

Wash the tomatoes and halve. Transfer them to a bowl and add the lemon juice and vinegar. Season with pepper; mix and refrigerate.
Peel the grapefruit and get the segments by inserting the blade of a knife between the thin membranes and separating the segments.
Add the lemon tomato salad in each glass. Add the crab meat then grapefruit. Top with the lemon zest and serve immediately.
