Tomato and Cheese Tart
This is a quick and simple tart using tinned tomatoes and cheese. It is great for a light dinner or lunch.

1 shortcrust pastry sheet
1 tablespoon Dijon mustard
1 (800g) tin tomatoes, peeled and diced
1 teaspoon 'herbes de Provence' or thyme
180g grated cheese
1 pinch salt and pepper, to taste
- Preheat oven to 160 degrees C. Line a buttered pie dish with the shortcrust pastry sheet.
- Pour the tomatoes with juice into a frying pan and cook for about 15 minutes. Stir occasionally until the mixture looks like jam. Season with salt and pepper.
- Brush the pastry with the mustard, add the tomatoes, sprinkle with herbs and cover with grated cheese.
- Bake for approximately 40 minutes until the shell is cooked and filling is golden brown.
