Easy Lemon Tart

    This lemon tart is so easy to make yet is still delicious. I always keep a tin of condensed milk and biscuits in the cupboard just in case there are unexpected visitors.

    Serves: 6 

    • 200g sweet biscuits
    • 70g butter, melted
    • 1 (400g) tin sweetened condensed milk
    • 2 eggs
    • 3 lemons, zested and juiced

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat the oven to 180 degrees C.
    2. Crush the biscuits then add the melted butter and mix. Line the bottom of a pie dish by pressing the mixture onto the dish with the palm of your hand.
    3. Pour the condensed milk into a bowl then add the eggs and mix well. Add the lemon juice and lemon zest.
    4. Pour the lemon mixture into the tart shell. Bake in the preheated oven for 10 minutes.
    5. Cool and refrigerate before serving.

    Loved the taste - just like cheesecake !! I thought the ratio of biscuit crumbs to butter was not right- there was not enough butter and the base seemed too crumbly - I added more butter but in the end it was still too crumbly. Will add more butter next time. All in all though I loved this tart. Thank you.  -  12 Jun 2014
