Green Tomatoes Jam

    This recipe is ideal for the last few tomatoes of the season that won’t get a chance to ripen before the first frost. It is great on toast or with curries.

    Serves: 60 

    • 1kg green tomatoes
    • 750g jam sugar
    • 2 lemons, juiced

    Preparation:15min  ›  Cook:30min  ›  Extra time:12hours resting  ›  Ready in:12hours45min 

    1. Wash the green tomatoes. Place in boiling water for 40 seconds, remove then peel. Cut into quarters.
    2. Mix the tomatoes with the sugar and lemon in a large casserole dish and set aside for 12 hours.
    3. Cook the jam on low heat for 30 minutes stirring often because the jam can stick to the saucepan very quickly.
    4. Fill the jars (previously boiled in hot water); wipe the edges of the jars and close them tightly.
