Feta and Herbs Triangles

    These feta and herb triangles are the perfect finger food for a party; I like to serve mine with a mint infused yoghurt.

    Serves: 6 

    • 300g feta, crumbled
    • 1 tablespoon fresh mint, finely diced
    • 1 tablespoon fresh coriander, finely diced
    • 2 tablespoons cream
    • 250g filo pastry sheets
    • 30ml oil

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. In a bowl mix the feta, mint, coriander and cream.
    2. Place one tablespoon of mixture onto a filo pastry sheet and fold into a triangle. Repeat until pastry and mixture is used.
    3. Heat the oil in a frying pan over high heat then fry the triangles for 5 minutes,.
    4. Place on paper towel to drain. Serve warm.
