    Simple, quick and cheap this coconut and rice pudding is a perfect dessert. Serve with caramel, mango or apricot jam for some additional flavours.

    Ingredients
    Serves: 8 

    • 1 1/2 litres milk
    • 200g arborio rice
    • 200g grated coconut
    • 200g caster sugar
    • 1 teaspoon vanilla essence
    • 80g creme fraiche

    Directions
    Preparation:40min  ›  Cook:30min  ›  Ready in:1hour10min 

    1. Bring the milk to the boil in a large saucepan; add the coconut and vanilla.
    2. When it starts to boil add the rice and stir from time to time; cook for 30 minutes over medium heat until the rice is cooked and milk becomes creamy.
    3. Add sugar and cook for 5 more minutes.
    4. Add creme fraiche then divide among serving bowls. Refrigerate until ready to eat; serve cold.
