Ham and Olive Bread

    An easy to make bread this ham and olive combination can be served warm or cold. It is ideal for packed lunches and picnics.

    Serves: 8 

    • 4 eggs
    • 2/3 cup (170ml) olive oil
    • 150ml white wine
    • 3/4 cup (90g) plain flour
    • 100g gruyere or similar cheese, grated
    • 1 teaspoon baking powder
    • 1 pinch salt and pepper, to taste
    • 200g cooked ham, diced
    • 45 green olives, stone removed and diced

    1. Preheat the oven to 210 degrees C.
    2. Crack the eggs into a bowl. Add the oil and wine. Whisk well.
    3. Stir in the flour, cheese, baking powder, salt and pepper. Add the ham and diced olives.
    4. Butter a bread tin and coat with flour. Pour the batter into the tin and bake in the oven for about 50 minutes.
    5. Check with a knife if ready. If the knife comes out clean then the bread is cooked.
    6. Remove the bread from the oven and straight away take the bread from the tin.
