    This is an easy to make ratatouille using eggplant, capsicums and onions. It can be used as a vegetarian main or as a side dish.

    Ingredients
    Serves: 4 

    • 1 eggplant, sliced
    • 3 tablespoons olive oil
    • 1/2 red capsicum, diced
    • 1/2 green capsicum, diced
    • 1/2 orange capsicum, diced
    • 1/2 yellow capsicum, diced
    • 1 onion, diced
    • 2 garlic cloves
    • 2 tablespoons tomato paste
    • 1 pinch salt and pepper, to taste
    • 1 pinch paprika, to taste
    • 10 parsley leaves

    Directions

    1. Fry the eggplant in a frying pan with olive oil over medium heat for 10 minutes. Set aside.
    2. Fry the capsicums in a frying pan with olive oil over medium heat for 10 minutes. Set aside.
    3. Sauté the onion and garlic cloves in a frying pan with olive oil over medium heat for 5 minutes.
    4. Mash the eggplant with a fork then add to the onion and garlic along with the capsicums and tomato paste.
    5. Cook over medium heat for 5 minutes.
    6. Remove from heat, season with salt, pepper, paprika and parsley then stir slowly. Serve.
