Apricot Tart with Almonds

    This is so easy to make with a pie shell filled with fresh apricots sprinkelled with brown sugar and then left to cook in the oven before getting a sprinkled of slivered almonds just before it is finished.

    Serves: 8 

    • 16-20 ripe apricots.
    • 1 shortcrust pastry sheet
    • 2 tablespoons slivered almonds
    • 3 tablespoons brown sugar

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat the oven to 180 degrees C.
    2. Line a pie dish with the shortcrust pastry and pinch the rim.
    3. Prick the dough with a fork to prevent it from swelling.
    4. Stone and halve the apricots then arrange them skin down on the dough.
    5. Sprinkle with the brown sugar and bake in the oven for 20 minutes.
    6. After 20 minutes or once the edges of the pie are golden brown, add the almonds and cook for 5 more minutes.
    7. Remove from the oven and allow to cool then serve with a scoop of ice cream.
