Cauliflower and Ham Pots

    Pots or ramekins are filled with cauliflower and ham in a cream sauce then topped with grated cheese. Ideal for a special dinner starter or main served with vegetables.

    Serves: 6 

    • 400g small cauliflower florets, washed
    • 150ml cream
    • 3 eggs
    • 2 tablespoons plain flour
    • 4 tablespoons grated Parmesan
    • 1 pinch salt and pepper, to taste
    • 180g ham, diced
    • 6 teaspoons grated Parmesan, to sprinkle on top

    1. Boil the cauliflower in salted water over medium heat for 10 minutes or until tender.
    2. Drain and add the cauliflower to the bowl of a food processor. Add the cream, eggs, flour, grated Parmesan, salt and pepper to the bowl.
    3. Mix until smooth. Then add the diced ham.
    4. Pour this mixture into buttered individual ramekins. Sprinkle each with grated Parmesan.
    5. Preheat the oven to 180 degrees C. Bake in the oven for 45 minutes. Serve immediately.
